These festive Cranberry Brie Bites combine buttery crescent dough, creamy brie, and bright cranberry sauce for an irresistible Thanksgiving appetizer that’s quick, elegant, and always crowd-pleasing.

INGREDIENTS

  • 8 oz crescent dough sheet

  • 8 oz brie cheese

  • 1 cup cranberry sauce

  • 1 sprig fresh rosemary


INSTRUCTIONS

  1. Preheat the oven to 375°F. Lightly coat a 24-cup mini muffin pan with cooking spray.

  2. Lightly dust a clean work surface with flour. Unroll the crescent dough. If using crescent rolls, press the perforated seams together to form a single sheet.

  3. Cut the dough into 24 equal squares. Gently press each square into a muffin cup, making sure the dough sits flat on the bottom and up the sides.

  4. Slice the brie into small, even pieces (about ½–1 inch). Place one piece of brie into each dough cup.

  5. Spoon cranberry sauce over the brie in each cup, dividing it evenly.

  6. Pull small rosemary leaves from the sprig. Place one small leaf on top of each portion of cranberry sauce.

  7. Bake for 12–15 minutes, or until the dough is puffed and golden. Brie will be fully melted and heated above the USDA-recommended 165°F.

  8. Cool for 2–3 minutes, then transfer to a serving plate and serve warm.


Storing Leftovers

Refrigerate leftovers within 2 hours of baking. Store in an airtight container for 3–4 days. Reheat in a 350°F oven for 5–7 minutes until warmed to 165°F. Microwave reheating is safe but will soften the dough.

Ingredient Substitutions

  • Crescent dough can be swapped for puff pastry cut into squares.

  • Use any soft, meltable cheese such as Camembert or triple-cream brie.

  • Cranberry sauce can be substituted with fig jam or apricot preserves for a sweeter bite.
