Baked Cod with Cherry Tomatoes, Olives, and Garlic Butter
This baked cod with cherry tomatoes and olives is a simple and healthy Mediterranean-inspired dish packed with flavor. Tender, flaky cod is baked in a garlic butter sauce with juicy tomatoes, sliced olives, and Italian seasoning—perfect for a quick weeknight dinner or a light, elegant meal.

INGREDIENTS
1½ pounds cod fillet
1 small red onion
3 cloves garlic
1 pound cherry tomatoes
¼ cup sliced black olives
1 tablespoon olive oil
1 teaspoon Italian seasoning
Salt and pepper to taste
¼ cup white wine or water
4 tablespoons butter
INSTRUCTIONS
Preheat the oven to 400°F (200°C).
Peel and thinly slice the red onion.
Peel and crush the garlic cloves.
Rinse and slice the cherry tomatoes in half.
Lightly grease a baking dish with olive oil.
Spread the sliced onion, crushed garlic, halved cherry tomatoes, and black olives evenly in the bottom of the dish.
Drizzle with olive oil, sprinkle with Italian seasoning, and season with salt and pepper to taste.
Place the cod fillets on top of the tomato mixture. Season the fish lightly with salt and pepper.
Pour the white wine or water into the dish around the fish.
Dot the butter over the top of the cod and vegetables.
Bake for 18–20 minutes, or until the cod reaches an internal temperature of 145°F (63°C) and flakes easily with a fork.
Remove from the oven and serve hot with your choice of whole grains.
