Breakfast Egg Muffins

INGREDIENTS

  • 6 oz bacon, cut into 1/2" pieces

  • 1 small onion, finely chopped (about 1/2 cup)

  • 1 large or 2 small russet potatoes, peeled and diced

  • 4 oz fresh baby spinach, coarsely chopped (about 2 cups lightly packed)

  • 6 oz mild cheddar cheese, shredded (about 1 1/2 cups), divided

  • 8 large eggs

  • 1/2 cup half and half (or equal parts whipping cream and milk)

  • 2 tsp Tabasco sauce


INSTRUCTIONS

  1. Preheat your oven to 350°F (175°C) and grease a muffin tin with cooking spray or oil.

  2. In a skillet over medium heat, cook the bacon pieces until crispy, about 5-7 minutes. Remove the bacon and set it aside, leaving the bacon drippings in the pan.

  3. In the same skillet, add the finely chopped onion and diced potatoes. Cook for about 10 minutes, stirring occasionally, until the potatoes are tender and lightly golden.

  4. Add the coarsely chopped spinach to the skillet and cook for an additional 2-3 minutes, until wilted. Remove from heat and let the mixture cool slightly.

  5. In a large mixing bowl, whisk together the eggs, half and half, Tabasco sauce, and half of the shredded cheddar cheese (3 oz).

  6. Stir in the cooked bacon, potato, onion, and spinach mixture into the egg mixture until well combined.

  7. Evenly distribute the egg mixture into the prepared muffin tin, filling each muffin cup about 3/4 full.

  8. Top each muffin with the remaining shredded cheddar cheese (3 oz).

  9. Bake in the preheated oven for 20-25 minutes, or until the muffins are set and lightly golden on top. You can check for doneness by inserting a toothpick into the center of a muffin; it should come out clean.

  10. Allow the muffins to cool in the pan for 5 minutes before transferring them to a wire rack to cool completely.

Storage Instructions

Store any leftover Breakfast Egg Muffins in an airtight container in the refrigerator for up to 4 days. Reheat in the microwave or oven before serving.

Ingredient Substitutions

  • You can use turkey bacon or sausage as a healthier alternative to regular bacon.

  • Substitute the russet potatoes with sweet potatoes for a different flavor and added nutrients.

  • Swap out the mild cheddar cheese with your favorite cheese type, such as mozzarella or pepper jack, for a flavor twist.

Disclaimer: Always ensure eggs and meat are cooked to a safe internal temperature to prevent foodborne illness. For eggs, the safe minimum cooking temperature is 160°F (71°C), and for bacon, it should be crispy and fully cooked.
