Cauliflower Tacos with Avocado Cream

INGREDIENTS
1 Cauliflower (cut into florets)
2 tbsp Olive oil
1 tsp Chili powder
1 tsp Cumin powder
½ tsp Salt
8 Tortillas
1 Avocado
2 tbsp Lime juice
¼cup Cilantro (chopped)
1 cup Red cabbage (shredded)
INSTRUCTIONS
Roast Cauliflower: Preheat oven to 425°F (220°C). Toss cauliflower florets with olive oil, chili powder, cumin, and salt. Spread on a baking sheet and roast for 20 minutes until golden.
Make Avocado Cream: In a blender, combine avocado, lime juice, and a pinch of salt. Blend until smooth.
Warm Tortillas: Warm tortillas in a skillet or microwave.
Assemble Tacos: Fill each tortilla with roasted cauliflower, a dollop of avocado cream, cilantro, and shredded red cabbage. Serve immediately.
