Cauliflower Tacos with Avocado Cream

INGREDIENTS

  • 1 Cauliflower (cut into florets)

  • 2 tbsp Olive oil

  • 1 tsp Chili powder

  • 1 tsp Cumin powder

  • ½ tsp Salt

  • 8 Tortillas

  • 1 Avocado

  • 2 tbsp Lime juice

  • ¼cup Cilantro (chopped)

  • 1 cup Red cabbage (shredded)


INSTRUCTIONS

  1. Roast Cauliflower: Preheat oven to 425°F (220°C). Toss cauliflower florets with olive oil, chili powder, cumin, and salt. Spread on a baking sheet and roast for 20 minutes until golden.

  2. Make Avocado Cream: In a blender, combine avocado, lime juice, and a pinch of salt. Blend until smooth.

  3. Warm Tortillas: Warm tortillas in a skillet or microwave.

  4. Assemble Tacos: Fill each tortilla with roasted cauliflower, a dollop of avocado cream, cilantro, and shredded red cabbage. Serve immediately.
