Chipotle Garlic Shrimp with Tomato-Oregano Glaze

INGREDIENTS
1 pound uncooked shrimp, peeled and deveined
2 tablespoons tomato paste
1 ½ teaspoons water
½ teaspoon extra-virgin olive oil
½ teaspoon minced garlic
½ teaspoon chipotle chili powder
½ teaspoon chopped fresh oregano
INSTRUCTIONS
In a small bowl, whisk together the tomato paste, water, chipotle chili powder, and chopped fresh oregano until smooth.
Pat the shrimp dry with a paper towel. Toss them in a medium bowl with the minced garlic and olive oil until evenly coated.
Heat a large nonstick skillet over medium-high heat. Add the shrimp and cook for 2–3 minutes, stirring occasionally.
Reduce the heat to medium. Add the tomato paste mixture to the pan and toss to coat the shrimp evenly. Cook for another 2–3 minutes, or until the shrimp are opaque and cooked through.
Remove from heat and serve immediately. Garnish with extra fresh oregano if desired.
