Simple Cheese Omelette
A quick and nutritious breakfast, this simple cheese omelette is fluffy, cheesy, and easy to make. Perfect for busy mornings or a high-protein meal.

INGREDIENTS
2 large eggs
Pinch fine sea salt
1/2 Tbsp unsalted butter
1/4 cup shredded mozzarella (or your desired cheese)
INSTRUCTIONS
Crack 2 eggs into a small bowl. Add a pinch of fine sea salt and whisk thoroughly until well combined and slightly frothy.
Heat 1/2 Tbsp unsalted butter in a non-stick skillet over medium-low heat until melted and slightly foamy.
Pour the beaten eggs into the skillet, swirling to evenly coat the bottom. Allow eggs to cook undisturbed for 1-2 minutes until the edges start to set but the center is still slightly soft.
Sprinkle 1/4 cup shredded mozzarella evenly over one half of the omelette.
Using a spatula, carefully fold the other half of the omelette over the cheese. Continue cooking for 1-2 minutes, until the cheese melts and the eggs are fully cooked to 160°F for food safety.
Slide the omelette onto a plate and serve immediately.
Storing Leftovers:
Leftover omelette can be stored in an airtight container in the refrigerator for up to 24 hours. Reheat gently in a skillet over low heat or in the microwave until warmed through.
Ingredient Substitutions:
Cheese: Swap mozzarella with cheddar, Swiss, feta, or gouda.
Butter: Can use olive oil or non-stick cooking spray for a lighter version.
